Bluewater Maribago Beach Resort is one of Cebu’s leading Filipino-owned resorts, celebrated for its distinctive brand of hospitality rooted in Amuma—the Filipino tradition of genuine care. At the newly reopened Allegro, Bluewater Maribago Beach Resort’s signature all-day dining restaurant, every meal is guided by Amuma. Here, authentic flavors, honest cooking, and warm service come together to create a dining experience that is both familiar and memorable.
Through thoughtfully curated buffets and an elevated à la carte menu, Allegro celebrates the richness of Filipino culinary heritage by showcasing seasonal harvests, regional specialties, and time-honored recipes. Rather than reinventing beloved classics, the kitchen honors their authenticity while introducing refined contemporary touches that enhance every plate.
Guests can savor comforting Filipino favorites such as Manok Bisaya Tinola, alongside chef-crafted specialties including Pinalutong na Tadyang Kare-Kare, Garlic Butter Baby Squid, Bagnet Binagoongan, and Shrimp Asado Cuapao—each thoughtfully prepared to highlight the depth, diversity, and abundance of local flavors.
The celebration continues at the dessert station, where timeless Filipino sweets take center stage. From Cassava Turon, Cabcab with Latik, and freshly baked Pandesal with Ube Jam to the live Halo-Halo station, guests are invited to rediscover the country’s beloved desserts. Every sweet ending is a tribute to the country’s rich culinary heritage.
Much of Allegro’s produce, seafood, and ingredients are sourced from local farmers, fishermen, and artisans, reflecting Bluewater’s commitment to celebrating Philippine harvests while supporting nearby communities.
“For us, Amuma is more than hospitality—it’s how we cook,” said Chef Gerwin Bailon, Executive Chef of Bluewater Maribago Beach Resort. “It means preparing every meal with respect for our ingredients, our traditions, and the people we welcome to our table.”
As Bluewater Maribago Beach Resort celebrates its 37th anniversary, Allegro invites guests to rediscover Filipino cuisine in a refreshed setting where every meal tells a story of place, every flavor honors local heritage, and every gathering reflects the warmth of Filipino hospitality.
