The hotel is home to a trio of in-house concepts, each offering something different—from French-style pastries and wood-fired pizzas to a hidden cocktail bar. Together, these homegrown establishments invite guests to explore a curated journey of taste. 

Baker J

Baker J is a go-to destination for French-style croissants. Known for their buttery, flaky texture, these pastries feature a crisp, golden exterior and a soft, airy interior. Each one is made from yeast-leavened, laminated dough and crafted using time-honored French techniques.

Pastries by Baker J

Alongside classics like the Butter Croissant, Pain au Chocolat, and Almond Croissant, Baker J offers an array of sweet and savory delights. Highlights include the Black Forest Croissant filled with cherry and chocolate, Strawberry & Riz au Lait Danish with strawberry and rice pudding, Matcha Croissant with matcha cream, Truffle & Brie Croissant, and the Chicken Piperade Croissant. They are also well known for their Giant Croissant.

Beyond croissants, Baker J serves a wide selection of pastries such as éclairs, macarons, cream puffs, and assorted tarts, as well as a variety of cakes and breads. These treats pair perfectly with their coffee, brewed from premium local beans sourced from Mt. Apo.

Baker J also offers a bistro-style dining experience, with a menu that goes beyond pastries and coffee to include all-day breakfast, sandwiches, appetizers, and mains. Guests can enjoy an Afternoon Tea set for two, featuring a selection of French-inspired sweet and savory bites, paired with handcrafted drinks.

Firehouse Pizza

Firehouse Pizza puts a twist on the traditional slice with its wood-fired sourdough pizzas. Using naturally fermented dough instead of commercial yeast, each crust develops a subtle tang, a satisfyingly chewy texture, and a crisp, airy edge. Every pizza is baked to order in a custom-built open fire oven, ensuring it arrives fresh and piping hot. 

Firehouse Pizza

The menu features classic favorites like Margherita and Pepperoni, alongside inventive signature creations. The Firehouse Pizza is generously topped with prosciutto, meatballs, rocket, salami, sun-dried tomatoes, and jalapeño, with the option to add burrata or other cheeses. The Mortadella Pizza pairs rich cream and pesto sauces with burrata and mozzarella, while the Stracciatella & Guanciale highlights premium Italian ingredients, combining creamy stracciatella cheese with guanciale, a salt-cured meat. 

Firehouse Fried Chicken

More than a pizza joint, Firehouse offers a well-rounded menu of starters, salads, pasta, vegan options, and desserts. From their baked pastas, we recommend the Truffle Cannelloni and Tagliatelle with Blue Cheese and Tartufo. A must-try is the Firehouse Fried Chicken, available in original, parmesan and parsley, or a signature spicy rub. Wash it all down with a selection of beers or their expertly crafted cocktails.   

Alibi Lounge Bar

Alibi Lounge Bar gives the perfect excuse to stay a little longer, unwind, and savor the art of a well-crafted drink. Tucked discreetly behind a keycode entrance, this speakeasy-style bar boasts an impressive selection of signature cocktails, artisanal gins, and premium spirits.

Among its signature concoctions is the Smokey Apple Sour—a balance of smoky and tart, featuring Iberico ham-infused Ezra Brooks, Laphroaig 10, fresh lemon, honey, and a hint of bacon. For something lighter and more aromatic, the Chamomile Cure blends chamomile sous vide Plantation Rhum, Fernet Hunter, lemon and oleo saccharum into a refreshing herbal-citrus drink. La Vida Rosa delivers a fresh, exotic mix of Tried and True Vodka, lychee liqueur and puree, rose syrup, and AER. Each cocktail is crafted with creativity and flair, turning every sip into an experience.

To complement the drinks, the menu features satisfying plates of Beef Tenderloin Steak, Masala-spiced Chicken, Prawn Aglio Olio, and classic pizza favorites for pairing and sharing.
