 Some Thai expands to Opus Mall with exclusive dishes inspired by regional flavors.

Opus Some Thai Dishes

Expanding both location and menu, Chef Jorge Mendez opened the newest Some Thai at Opus Mall in Quezon City. What began as a modest Thai inspired restaurant in Tomas Morato became a Michelin Bib Gourmand recipient that opened its third branch this year. The goal was simple: respect and honor inspiring cuisines while bringing a more personal perspective and creativity into the experience.

Talking to Chef Jorge, he went through the exclusive dishes available only at the newest branch. His family’s love for the deep-fried local favorite okoy made him create the Tod Mun Goong. It’s a familiar dish made special with the infusion of foreign influence like the Thai-spiced vinegar dip.

During a trip to Indonesia, Chef Jorge appreciated Bali’s sweet barbecue glaze and its potential to be the base for a dish. Blending Filipino’s love for grilled food and sweet taste, he decided to create the Thai BBQ Pork Ribs. To make it more vibrant, he added Thai aromatics like garlic, ginger, onions, and kaffir lime.

Very different, his Thai Grilled Green Curry Chicken is not soupy unlike the traditional version. He said, “If I soak my chicken in the green curry, parang hindi ko na natitikman yung chicken.” For a change, he grills the chicken first to enhance the flavor of the meat while also adding a layer of smokiness in every bite.

Filipinos love bagoong and rice so why not make a Thai inspired Bagoong Fried Rice? Instead of salty, he made his own bagoong with a more sour taste to stay true to the flavors of Thailand. He explains that Some Thai is Filipinized Thai food that he believes appeals to the local palate.

His sweet tooth challenges him to make great desserts. The Thai Coconut Crepe Cake is a standout addition with the coconut cream and pandan custard. Although not a pasty chef, he takes time and effort to research and develop non-generic options. He explains, “That’s the last dish you’ll get after you dine in, for me it has to be topnotch.”

Mixing and balancing cuisines, he shared key ingredients he loves to use. In Thai cuisine, kaffir lime leaves are his favorite. Vibrant and refreshing, it has the ability to break an extra savory or salty taste. He still advised to use it properly and moderately to avoid making all dishes taste predictable. Panucha or coco sugar, on the other hand, is his favorite Filipino ingredient. There is a funky note to it. Instead of using plain sugar to make a dish sweet, adding panucha creates a sweetness that also has a more nutty taste to it.
