From Poco, meaning small, and Fino, meaning fine, Pocofino has always been our beloved pause for daily small, fine pleasures through their authentic Italian coffee.
Now, from the small, fine coffee beans that make their remarkable cafe comes small, fine ingredients that make up their authentic Pizza Napoletana—a huge milestone brought by their passion of bringing Italian goodness home.
Tuesday Angliongto, co-founder of Pocofino, reminisced on how they once attended a pizza-making course led by Associazione Verace Pizza Napoletana (AVPN) in Italy, leading to their goal of bringing authentic neapolitan pizza back home.
However, during the start of their cafe, coffee became their main focus—Pizza Napoletana becoming a dream they could only realize six years later.
“When we got this space in Greenhills, it felt like a license for us to move into food, the kind that general customers [want] because, usually people don’t want coffee in a day. One drink lang and tapos na sila. But with pizza, maybe they’ll come back for dinner so we wanted to add more to the menu to give them something else,” Tuesday said.
AVPN attended the launch of their Greenhills Mall branch on October 24, bringing with them the certification of authenticity for Pocofino—the first in the country.
From dough crafted with Italian 00 flour, fermented for an entire day, to its iconic 485°C wood-fired bake, Pocofino assures that their “Pizza + Coffee” pairing will truly harness Neapolitan spirit, especially their Maestro Pizzaiolo, Chef Matteo Minante.
While Tuesday admits that there was some difficulty bridging Italian tradition with Filipino palate, she believes that the two countries’ culture is interconnected in a manner that allows both flavors to work without having to sacrifice the other.
“For authenticity, we follow the standards of the association. So they’re the ones who trained them on how to make pizza, how to get the right dough, what kind of oven to use but in terms of the Filipino warmth, it’s actually not so far from the Italian warmth,” she added, explaining how their cafe focuses on family and food-centrism.
You may enjoy authentic Margherita, Chicken Pesto, Marinara, and more flavors of Neapolitan Pizza and Pizza Fritta fresh from their ovens at Pocofino’s Greenhills.
