Culinary Collaborations with Lamb

Before my family trip to Taiwan, I was able to attend the introduction of the “Lambtastic” feast that highlighted Australian lamb through an array of delectable dishes. 

The venue was Souv, one of my favorite restaurants serving innovative Mediterranean dishes. Famed culinary figure Chef Roby Goco, renowned for creating Souv and Cyma Greek Taverna, was appointed as a “Lambassador” with his expertise in showcasing lamb in his menu. He first introduced his signature Paidakia or Lamb Ribs, cooked to perfection in a charcoal oven. Known for incorporating lamb as a more mainstream staple, he further added to the menu Lamb Keftedes or the Greek meatballs, Grilled Lamb and Watermelon Salad, as well as the traditional Lamb Youvetsi. Today, more Filipinos have a better appreciation of lamb dishes, making it a primary choice when considering what to order in restaurants.

The Lambassador program is a global project that identifies influential food professionals who are passionate about cooking with Australian lamb. The program began in Japan in 2015 and has grown to a community of over 50 food professionals worldwide. Chef Goco is the first Lambassador representing the Philippines, entrusted with the mission to elevate awareness and appreciation for Australian lamb in the country’s gastronomic landscape.

Asked about his sentiments with this recent title, Chef Goco shares, “The Australian lamb is renowned for its exceptional quality and flavor, and I look forward to showcasing its versatility in my restaurants and beyond. Through culinary collaborations and creative initiatives, I hope to inspire a newfound appreciation for Australian lamb while celebrating the diverse flavors of both Australia and the Philippines.”

With all these, the public can expect more culinary collaborations with Chef Goco and the Meat and Livestock Australia in highlighting premium and sustainable lamb, while continuously fostering a deeper understanding through food.
